MAC AND NOT CHEESE MONDAYS!!! Really, the only kind of Mondays to live for, in my humble opinion. This will be one of my Vegan MoFo themes and I’m way too excited about it.
Today, I’ve decided to take my one pot Mac and Not Cheese recipe, and add some grown up elements!
After following my existing recipe, I decided to add some kale (massaged lightly in nutritional yeast, olive oil, lemon, and garlic powder and baked for 10 minutes at 350 F), roasted artichoke, caramelized onions, fresh basil, and a handful of coconut bacon.
Lastly, I topped it with some paprika and a few cute little basil leaves from my friends’ plant that I’m holding hostage…erm…I mean…plant-sitting!
This is a delicious way to pretend you are being healthy while shoving vegan Mac n Cheese in your face. If you’re feeling fancy I might also recommend adding fresh cherry tomatoes, but I found it pretty gratifying to drizzle some organic ketchup on top to completely counteract any ounce of class this recipe previously contained.
So, that’s my first Mac n Cheese Monday post! Do you folks have any favourite Mac recipes to try, or that I could attempt to veganize?!
Work starts back up again tomorrow and I’m like, super stoked to have this as leftovers for lunch!
