I think I need to change my domain name to http://www.brokevegancooking.com, guys. Seriously, I am going to be honest and say that Vegan MoFo has gotten a little exhausting when all I want to do is live off of ramen noodles and coffee but I feel like I need to be posting pictures of colourful dishes and going grocery shopping every other day.
Today I came home and realized I had a few things in the back of the fridge that WEREN’T GETTING ANY YOUNGER. These things included onions, purple cabbage(seriously, don’t ask me how long that fucking cabbage has been there), orange bell pepper, parsley, roasted artichoke arts, sundried tomatoes in oil, slivered almonds, and other things. I cooked some rice n my rice cooker with a cube of veggie bouillon and some of my favourite herbs. Simultaneously in a frying pan, I sauteed onions and the rest of my veggies. I combined all this with the rice, a can of chickpeas rinsed and drained, and some leftover pesto. So here I am. And here is my dinner tonight and lunch tomorrow and probably a couple other meals.
