I talk about waffles all the time. Especially since I received my very own waffle iron which I have been coveting since Christmas. A few folks have asked me my go-to recipe for a good ol’ fashioned waffle; no pumpkin, blueberries, or any other frills! I of course am happy to share the Sunday brunch love, and have obliged! I best enjoy these waffles with Earth Balance and maple syrup. However, M tends to drizzle them in chocolate syrup and we plan to eat them with coconut milk ice cream for breakfast next weekend because we are grown ups! I would also eat these alongside some fried Seitan “chicken” and collard greens in a heartbeat. Enjoy!
WAFFLES WAFFLES WAFFLES
2 Ener-g Egg Replacers (or use flax seed!)
1 3/4 cups soy milk
1/2 cup melted Earth Balance
2 tbsp maple syrup
1 tsp vanilla extract
4 tsp baking powder
2 cups all purpose flour
dash of salt
-Preheat waffle iron while you throw together your batter! Turn on pop punk.
-Whip together egg replacer until frothy and wonderful! I love Ener-g, but ground flax and water would also work. I would not use any other egg replacer that is super baking soda/baking powder heavy in this recipe.
– Combine soy milk, melted coconut oil, sugar, vanilla and egg replacer.
-Slowly add dry ingredients until you have a thicker-than-pancake-like-batter.
– If needed, oil waffle iron before starting. Pour enough mix onto hot iron, and spread with spatula. Remove with tongs when golden brown!
