It’s been a long week already, friends. I am breathing a sigh of relief that tomorrow is Friday! Last night, I was midweek and feeling exhausted, so took some time to rest up at home, Netflix up, and cook some things for myself as I have been on the run and on the road a lot lately! While watching my new favourite sitcom Happy Endings, I also enjoyed some Luna and Larry’s for dessert, topping with with almond slivers and homemade coconut caramel sauce. Here is the recipe!
1 can full fat coconut milk
1/2 cup brown sugar (or coconut)
1 tsp vanilla
sprinkle of salt
-Combine coconut milk and brown sugar in a small saucepan and bring to a boil on medium high heat.
-Reduce heat and allow to simmer for half an hour, uncovered. Stir occasionally and allow to thicken.
-Remove from heat and add vanilla, and a sprinkling of sea salt if you would like SALTED CARAMEL.
This is pretty much all I wanted to say. Feel free to let it cool down and store in a mason jar in the fridge, or MAKE ICE CREAM SOUP AND EAT IT ALL AT ONCE.
