Another National Vegan Pizza Day has come and gone, and like a true pizza lover, of COURSE I made pizza for dinner last night. How about you guys?! If you didn’t, I totally won’t tell anyone if you celebrate a day late.
Int he past, I’ve always enjoyed making our pizzas at home from scratch. Take for example, last year’s pizzas were a vegan margherita w/Teese I smuggled home from Portland, as well as my signature green goodness pizza!
This year however, I thought I would take things even one step further, and make my own cashew mozzarella to adorn our ‘zas. Now, I have seen this recipe for Moxarella cheese everywhere, and decided I just had to try it! The ingredients were simple enough, and I even made a double batch which I found later was completely unnecessary.
I did enjoy this cheese, though I did find that despite soaking the cashews for a few hours and blending at high power, the grittiness from them never really went away, so the texture never really quite went away. However, it stretched like real cheese, which obviously comes from the tapioca, so that was cool! I loved being able to put it on on dollops, and watching it firm up on the outside was beautiful! We were super proud of our pretty pizzas and they were delicious!
Below are the pizzas that M. and I made, before being tossed in the oven. Mine was made with my creamy pesto I put on everything, broccoli, caramelized onions, and kale! Kept it really simple to highlight the foxymoxy.
M’s on the other hand, was the polar opposite of my pizza and I loved it! His started with a base of barbecue sauce, Green Cuisine Seitan (which tasted like the closest thing to vegan steak I’ve ever had), and fresh chives! Again, pretty simple. His looked gorgeous!
Finally, here are our babely ‘zas out of the oven! Best enjoyed with a couple episodes of Trailer Park Boys and some fresh raspberry lemonade!
