Thankfulness and Pumpkin Muffins

Well darlings, I suppose it’s that time of year again- Canadian Thanksgivrs. Generally, my Thanksgiving posts every year are pretty much the same- a lot of beige deliciousness with splashes of brussels sprouts green and vibrant red cranberry sauce. I already travelled to Calgary to celebrate Thanksgiving early with my madre, brother, and Benson last week, as it was also my brother’s birthday and a good time to celebrate! So, I started this weekend with baking some custom Blue Rose cupcake orders, and getting them to their rightful consumers. Today, I met my mama halfway for lunch and tea timessss, because I had the kind of crazy week where I just needed a nice drive and some earl grey.10337736_10150468653474991_1988721482947545984_n






Yet, I am thankful for ALL of this. Blue Rose Baking Co. is now in its fifth month of operation since launching back in June. This is also pretty much when I moved up to Edmonton. I have to say, I am absolutely overwhelmed by all of the support I’ve received thus far. I feel like I’m carving out a little nook in this awesome vegan community and I am so fucking grateful (excuse my language, it’s happy language) to all of you who came to visit all the time at 124 Grand Market during the summer season, even braving the rain and wind some days! I love when you guys share your moments via twitter, instagram, whatever, of hanging out at some of my favourite cafes in Edmonton, drinking matcha and eating MY CUPCAKES THAT I MADE. How fucking cool is that? I am so thankful to work for myself, and make vegan treats for a job and do my tiny little part in the vegan community through baketivism. I am also thankful for all of my loved ones for putting up with my nuttiness during this process. Thank you for tolerating my midnight texts about sassy yeasted doughs, my lack of fiscal responsibility, and just being there when I need to decompress and have hugs and eat noodle soup or whatever. I am full of love and gratitude right now.

Anyways, last week during my visit, my mama and I had the chance to bake together, and I shared one of my favourite pumpkin muffin recipes with her, so wanted to share it with you guys too. These muffins are versatile, call for pretty simple ingredients, and are best eaten with a hot tea in hand, while sitting on a rock watching autumn leaves fall into the river. Or whatever.

Pumpkin Chocolate Chip Muffins
1 1/4 cup cooked pureed pumpkin
1/2 cup non dairy milk
1/4 cup oil
6 tbsp maple syrup
1 cup cane sugar
1 3/4 cups flour
1 tbsp baking powder
pinch of salt
2 tsp pumpkin pie spice(a combination of cinnamon, nutmeg, ginger, cloves)
1/2 cup dark chocolate chips (or raisins if you’re boring)
1/2 cup chopped walnuts (optional- you can really just use your favourite nuts or seeds here!)

-Preheat oven to 400 degrees farenheit and line yer muffin tin!
-In a large bowl, sift together all dry ingredients except for chocolate chips and nuts
-In another bowl, whisk together your pumpkin, nondairy milk, oil, and maple syrup.
-Make a well in the dry ingredient bowl, and mix in wet ingredients until you have an awesome batter with like not really any lumps. Fold in your chocolate chips and walnuts.
-My favourite way to scoop these into their muffin liners is with an ice-cream scoop! That way you get a nice consistent size and its less of a mess.
-Once filled, baked for 18 minutes or until a toothpick comes clean, and enjoy!

I hope that you all are having a wonderful weekend. This recipe is a great excuse to continue the pumpkin love all through autumn or throughout the year.
